What started as an idea turned into reality in December 2021. A lifelong dream of Juan Hernandez was to own a restaurant. After years of looking for the perfect location and continued support of his wife Brandy and his now adult children, 888 Cheese & Co was born.
This isn’t just your plain bread and cheese…. This is an anything and everything you can make into a grilled cheese concept. Sandwiches with fun names, mostly inspired by family (including the pets) and a little bit of whimsy, and even more fun food pairings.
Juan and Brandy started dating 08.08.08 and were later married August 8th. When searching for a place to call their own they landed on a house with the address 888 and knew it was the one. At the time their Chinese host student said it was considered the luckiest of numbers. So why not bring all that luck and love with us and share it with you?
